Everything frozen up today so I am taking advantage of the down time to split the balance of my emergency wood. Forecast has changed yet again with another crazy week lined up. Expecting to boil Wednesday and at least Saturday. Sunday will be dependant on sap quality. Looks like I won't be pulling taps until Wednesday next week. Light syrup with great taste coming off the evaporator yesterday after resweetening the pans.

It was trying today to run, got about 50 gallons today and all is still clear. Pulled a couple of taps again today as the trees were budding, got a few pails that haven't produced on this last run so I'll pull those also. I'm really liking the taste of these past few batches, most of it I'll save for the season reward.

Both tanks filled to capacity and I left some buckets closer to the house full tonight in hopes they freeze. Planning on running from sun up to sun down tomorrow with excellent sap quality in the tanks. If the buckets do manage to freeze I will gather any ice for the bulk tank to try and help me get through the upcoming warm weekend. Saturday or Sunday will be my last boil given the very warm temperatures. Pulling all the buckets and taps Wednesday next week with next weekend as the big clean up project. WOW! What a season!

Doing the last collection today as most things will be full and will start pulling everything while doing up the sap. The last batch was a lot lighter and great flavour to it, I know it'll be flowing good for a few more days-but I'm just bone tired and have too many other projects knocking at the door.

I was hoping to boil all weekend before shutting down but with only a face cord of wood left it will be Saturday only. Taking Wednesday off work to pull the taps and collect the buckets.

We're boiling today and planning one last boil on Saturday. Sunday we start pulling taps.

We got a decent amount of sap the last 2 days but it's definitely slowing down and the sap quality is going downhill and the temperature rises.

I am done. Boiled all day Saturday using up every last stick of wood I could get my hands on. Even went to the house and grabbed the left over kindling from the wood stove. Pulled half the taps today and will get the rest Wednesday. Still some filtering & bottling to do and I need to pick up a couple small barrels of bulk to augment my annual supply . Next weekend will be all about scrubbing buckets and anything else maple related. Bring on dandelion season!

We are definitely done. Sap quality was still good Saturday but sugar content was down and the syrup was definitely very dark. We started pulling taps Saturday afternoon and got more done yesterday after The Beast and the RO were put to bed for the season. What sap was still running yesterday was not fit to be pumped, RO'd or boiled!

I pushed through this week with a focus on cleaning maple crap and getting it stored. Over 1000 individual pieces of equipment scrubbed, sanitized, dried, and put away. Happy to say I am done and turning my attention to yard work next. Wow! What a season!
