Default Cider vinegar

I made my first 5 gallon batch of apple cider vinegar last October. It's been a long wait untill now and it's time to bottle it. I've never done this before. I tasted it and it tastes great. Even better then the braggs I used to start the mother. I've got a couple of questions.
Do I remove the scum on top and stir the vinegar up then bottle it or do I just bottle the clear stuff and let the settled stuff on the bottom be and chuck it out?
I remember the braggs vinegar with the mother was really cloudy and had solids in it. Mine is clear as wine.
Hope there is some vinegar makers out there
I'm going to try maple vinegar next year and see if it turns out

That's the pitch I was trying to sell to the wife. But...... I have a a small jet press for wine that I will probley use. Always wanted to try it on syrup but didn't want it to end up in a melted heap when I was done. Probley not rated for 212+ or even 180 f at all.
Now if she really likes the vinegar I can tell her I need a vinegar press and it will double as a maple syrup press. Try a different approach at it.

Should be fine with hot syrup...... Could you video it just in case it does not work?

I rack it off just because it seems like a lot of junk on the bottom. What is that stuff? I always thought it was waste produce by the mother. I made maple vinegar awhile back and it was TERRIBLE. (possibly semi toxic) If you are able to make a good batch, I would like to hear about it on here.

I actually filtered it through a maple prefilter cone I had left over from this year. Worked great. I did a couple that We're unfiltered. See if it tastes better. Who knows.
