I went to the bills/patriots game back in week 2 at Th Ralph and made the following maple bacon venison bites. Let the marinade for a day or so before the game and then cooked them up while tailgating. They were AWESOME! Turned out great.

The funny thing was, I was a New Yorker that tailgated with something made from a deer I shot and maple syrup I made, but the guys I became friends with next to us were from Quebec but made buffalo wings!!!!!! I was more canadian than them. Haha

I like your recipe big sap. I have been making a version for some years we call Poppers. Lay a slice of water chestnut against the meat and wrap with bacon as you do. It creates a nice crunch when you eat them. I just use a butter milk and soy sauce marinade but yours sounds much better. I use the inside rounds. Very tender.
