Default eating a new york strip at mid night

I had to cater an event today...like most days.
Anyway
They all ate NY strips and got my hands on one that was leftover with some fixins that will make your mouth water. Boursin whipped potatoes, buttered asparagus, WOOD fired steak(thats all we do because its the best) and some demi glaze just to tickle that pallet. Glass of my best red(watermelon boonze) will top it off.

Just kidding on the boonze.

yup, always wanted to know the answer to that trivia question...why do they call it a NY strip?

the ny strip was origianly called a delmonico after the Delmonico resteraunt in manhattan in the early 1800s. It was the meat packing city of the us at the time along with kansas city wich also names the steak as a kasnsas city strip.
the delmonico was then named the ny strip by surrounding establishments that didnt want to infringe on the delmonico name due to association not law at the time. Why use a steak named after a competitor? So the NEW YORK STRIP was born.
Current ly the delmonico is casually refered to to the not so choiciest cuts that are located between the ribloin and striploin of the cow. These two part compose the center of the animals back and there are two per animal. When you leave the bone on the striploin and add the tenderloin side which is located within the body cavity you get a t bone....(exhale)
I hope this clears things up...
ps not my favorate cut but an ok one.

We all still call it a Delmonico in these parts. Go to the butcher around here or grocery store and ask for a NY Strip and you get a package of steak labled Delmonico.

Butcher? Those still exist? I thought they were over run by walmart and kroger and giant eagle and piggly wiggly:::

nope...here in northern NY where 3rd and I live you can still go to the meat market/butcher and pick out your fresh cut steak. In certain spots you can even ask for slab bacon and watch them slice your bacon in front of your eyes, or can even buy it by the lb slab form and take it home and cut it yourself
