Default Maple cream

Just bought a cream machine and trying to figure it out . Unable to find any videos that show the complete process . But my first time making it seams to be to thin how think or think should
It be any help would be great

Always looks thin coming out compared to after it sets for a bit. Final consistency has to do with temperature it was cooked to before mixing.

Do you recommend a temp , would like it to be thicker then I made . Would like to spread with knife not spoon

Different temps for different locations and different thermometers. Go a couple degrees hotter and try again. We use 234

From one (not me) person that done a lot of research on Confections had it that;
Humidity....
barometric pressure....
elevation...
and of course temperature....
It seemed that every little thing effected Confections one way or another to change the right temperature for the prefect end product.

Let your cream warm up to room temperature after cooling . If you dont you will be replacing the gear pump and the machine will plug if it is too cold .
