Default why does my pig pop?

So this is the situation and I know there's an explanation, but I'm not smart enough to figure it out.
Situation.........
Boiling syrup for granulated sugar. I use the steam kettle, but to get 3 gallons to my desired temp takes forever with the kettle, so once I hit 260 or so I take it off and transfer to a pig to finish over direct flame. Once the syrup reestablishes a boil it will pop and bang in my pig. Why is this? Sometimes just a noise, and other times will pop over the sides. Any thoughts

I think it is the steam trying to escape but the weight and thickness of the syrup impedes it until the pressure overcomes the restriction and has a mini explosion.

I get the same thing every once in a while making granulated sugar or butter. I figured it was a very large gas bubble forming and releasing but I don't have any way to prove it.

i'm not sure why your pig pops, but I originally opened the post because I thought it said, "why does my pig poop"... my reading comprehension can be something to be desired from time to time...
