Default tried to make butter/cream lol

I tried to make some sunday night
consistancy seems good but it has a burnt after taste
i used dark syrup from my last batch
might that have caused it?
Used low heat not high for the boil boiled on 2 just a simmer
it was my first time and next time will be cooler outside msn i was sweating lol
sore arms too

Try making some with light syrup. You will get more consistent results.

Listen to what General Stark said early to middle syrup work the best and is the most consistent. I usually get my best results on medium heat as far as boiling. I use a little butter around the edge of the pot to keep foaming down. Also when you chill the syrup let it sit over night. It seems that with it sitting all night that it turns more consistent and makes a better cream in my experience anyway. You ask 10 people and you will get probably 8 different various ways. Try small batches at first till you get the hang of it. Find what works for you and make sure your thermometer is accurate.
