Default Flavored syrup

What kind of labeling is required when you INFUSE a flavor into maple syrup. Does it have to be included in the generic content or can it have a sticker added to the front of the bottle?

Hey Chuck, wouldn't you be better off taking the bottle of booze and labeling it infuse with maple?

You cant sell booze. You would not be able to sell alcoholic beverages at a farmers market. There are other flavors that can be infused. I don't want to treat it as a novelty item but as a legitimate product.

Chuck I would think that you would want a list of ingredients in the order of their percentages. Normally the most to the least. Also you'll want to remember once you infuse it's not 100% natural anymore and is now a taxable commodity. Another thing we'll at least here in NY you need a 20c kitchen to do your blending.

Jake I don't believe you can measure flavor as far as a % of the product. I would think it would fall under the trace amount category. I don't think there is anything deceitful about saying 100 percent maple syrup infused with all natural cinnamon flavor or made using 100 % pure maple syrup infused with all natural cinnamon.

My kitchen is certified by the AG department and I don't consider sticking in a cinnamon stick at the time its bottled BLENDING. does that sound correct?

You could probably say infused cinnamon and be fine. If I were to do it I would personally would break out a list of ingredients and state ie 1 oz cinnamon or 2 grams of cinnamon. For the maple minis I sent them right out a lab and they gave me a complete breakdown of what was in the candy. I gave them the recipe also and did the break down of percentages of each ingredient. Will this be the case for infused syrup probably not but if a customer would ever ask how much say cinnamon is I the infused syrup I would think a good selling point would be to point them to the list of ingredients.

I see your point. I'm using the cinnamon stick that are rock hard and don't dissolve so I'm not sure if its detectable as far as how much is present. Now I'm only using this as an example but if you were to scorch some syrup in your pan and you filter it and you detect a hint of smoke/burnt taste is there any real percentage in it.

You need a food processor license with the department if:

You gather maple syrup from others for bottling, packaging or processing, or
You process your own or others’ maple syrup by adding color, flavors or other ingredients, and
Your gross receipts from maple syrup and concentrated sap sold at wholesale for further processing exceed $5,000 during the year of registration.

If that is the case then you have off flavor syrup and can not be sold as grade A maple syrup. Instead this is commercial syrup and should be treated as which when selling. You need to know your state and federal rules on size of containers that you can sell commercial syrup as retail if it's allowed at all
