Default freezing maple cream

Can I freeze maple cream ? I have a customer that wants to know if she can freeze maple cream then ship to the far east ? Any thoughts ?

yes you can but be aware it will draw condensation when pulled out of the deep freeze therefore it should be made thicker than normal to make up for the fact that it is being froze. have you ever considered making shelf stable cream?

Back to the question. I store my cream in the freezer for months. Biggest problem is labels as stated before. I see no change in consistency.

From New York State Maple Confections Manual " In New York invertase is considered a processing aid and does not need to be declared on the maple cream label. In Vermont this is not the case."

So check your state.
