Default 1st batch maple cream with our new CDL cream machine

Not as common in MN so I have a lot of orders.
Actually this is the 1st time I have had it.
A great value added product.

Terry,

Most people here have never heard of it either. What's your marketing secret? What is it best used on, so far I only tried it on bagels. $8/half pound is the going rate, right?

Just made 2nd batch and it came out better than the first, wish I had your machine that would be really nice.

anyone I sell syrup to, I have them taste it and that sells a half lb right away.
So far a lot of reorders. I will have alot made for The Christmas holidays as well.
Cheap natural gift for people to give.

On english muffins with butter!!--can't be beat.

Default maple cream update

I have found that when making a batch of maple cream every batch is a little different.
Tonight I boiled syrup up to 234 and cooled to 80 degrees and it was not taffy but more like syrup and would not cream. I reheated to 237 and cooled back down to 80 and it creamed perfectly.

Also I have not weighed a gallon of syrup and tonight I poured 2 two quart jars of syrup into the kettle.

It produced 6 1lb containers and 1 8 oz container. 6.5 lbs of cream.

I weighed each one pound container and they were all from 18 to 20 oz. I will have to weigh a few as I fill to get the correct level for a pound. Even so I would have thought I would get at least 10 to 10.5 containers full of cream.
How close do you get to 11 pounds of cream from a gallon of syrup??

Last woodsman, Go to the Cornell maple web site, they sell Maple confections notebook. It tells how to make cream candy etc. According to the notebook, syrup should be cooled to at least 70Degs. i do agree each batch is different. I have cooled the syrup to 45 degs before and it makes very smooth cream. Also it is impossible to get 11 lbs of cream per gallon as that is very close to what correct density syrup weighs. I find the yield per gallon to be closer to 8 lbs.

Thanks that is pretty similar to what I am getting.

So far getting it to cream at 80 has not been a problem. I have read that sheet in fact I have it printed out in the sugar shack. I do like my new CDL cream machine it really is easy to use and clean.
