Session Descriptions

As part of our meeting, Jay Johnson from the Michigan office of The National Agricultural Statistic Service will be updating us on our Maple Syrup data. Also, Bob Battel will be explaining the steps involved in having your farm certified under the (MAEAP) Michigan Agricultural Environmental Assurance Program.

Session #1 – Tapping Guide Lines
Dale Forrester; When is a tree big enough to tap? How many taps per tree? How many taps on a 5/16” line? Buckets vs tubing, vacuum vs gravity. These questions will be discussed. Bring your questions to this ‘open forum’ session.

Session #2 – Product Labeling, Cottage Food Law, Licensing, Sampling
Pete Edmonds; Senior Food Safety Inspector- Michigan Department of Agriculture;
Maple syrup labeling will be addressed along with other food safety information including cottage food law, licensed maple operation and farm market sampling. If you are selling directly to the public, this information will be helpful to you. A time for questions and answers will be given.
Session #3 – All About R/O’s
Tom Cook & Dale Forrester; What is an R/O? How do they work? How do you know when you need one? Proper cleaning, basic maintenance, minor repairs and other topics will be covered.

Session #4 - Beginners Session
Art & Jan Currey; Moving from beginner/ hoppyist to commercial producer. The important equipment needed. Filtering and canning equipment. Passing inspection from the State of Michigan Dept. of Agriculture for a food producer’s license. Finding your first customer and market.

Session #5 – Marketing with Social Media
Joe Woods; How do you keep your customer up to date with your sugar operation in today’s fast paced world? Social Media is becoming one of the most important ways in which you can keep your customers coming back to your sugar house and create an understanding of what goes on in your sugar bush year around. I will address easy ways to set up Facebook, Web pages and Twitter accounts.

Main Speaker - Maple Nutrition Information
Ray Bonenburg; President, Ontario Maple Syrup Producers’ Association. Most people would not understand that maple syrup and maple sugar are proving to be the most healthy and nutritious sweeteners out there. The International Maple Syrup Institute (IMSI) initiated an exercise over 2 years ago that included compiling the research and science related to health benefits of maple syrup into one location. A comprehensive CD with professionally done graphic tools were produced and shared with IMSI members. A plain language rack card and more detailed poster were completed and printed in the spring of 2012. Ray Bonenberg led this project with a diverse team from the IMSI.
Research done by Dr. Navindra Seeram from the University of Rhode Island and Dr. Yves Desjardins from Laval University in Quebec have been working on isolating and identifying the phytochemicals in maple syrup and maple plant parts. Ray will be presenting a summary of the research methodologies of these research projects and sharing the summaries and conclusions. Much of the funding for this research comes from different levels of government and the maple syrup industry.
