Default Stainless

So the stainless the sugaring industry uses is 304, I believe there is only one type of 304 and its all food grade. Evaps are made out of 22gauge from what I have seen people posting on here. What is the gauge for other things like water jacket canners, steam hoods and things like that.

The better welder you are the thinner the material you can use. I believe 22 guage is about as thin you want to go because of strength. My hood is very light 22G aluminum and is pop riveted so it has some strength in the double joints. I don't think a bottler would need to be any thicker metal because its double walled.
